From grape to glass it takes two years to produce a bottle of Extra Dry. The grapes are hand picked, and taken to the winery in 25kg boxes to prevent oxidation. The grapes are whole cluster pressed to retain their unique flavor profiles. The juice is naturally settled over a 24 hour period to produce fruitier and more elegant wines. The blend is made from 8 different base wines. Both the primary and secondary fermentations use our proprietary yeasts. These yeasts give structure, softness on the palate and more complex aromas of honey, dried fruits and flower petals.
