The Brut IPA style, new to many, is effervescent and intensely aromatic. It’s the ‘Champagne’ IPA, with no residual sugar and a very dry finish, as in a Brut Champagne. Bittering hops are traditionally used to balance the sweetness left behind from fermentation, but this style uses a natural enzyme that helps yeast break down all residual sugars from the brewing process, leaving behind a dry, champagne-like finish.
The Bloomington Brewing Co. puts our own unique twist on this Brut IPA by using all Centennial hops. With three hop charges into the fermenter, the incredible fruity aroma of the Centennial hops dominates the delicate malt flavor. The resulting flavor has hints of earthy Concord grape jam, and a spritzy mouthfeel, while maintaining a bone dry finish.
